Do you use your slow cooker frequently? I have to be honest. It is the least used appliance in my kitchen. However, as life gets busier I find myself needing easy ways to feed the family simple keto dinners. As a result, this recipe for slow cooker teriyaki chicken and kabocha squash was exactly what I needed.

This recipe was created for Kevin’s Natural Foods 2020 Recipe Challenge, however all the opinions are my own.

As far as easy recipes go — I can confidently tell you that it would be difficult to discover an easier more delicious recipe than this. Firstly this low carb dinner includes minimal ingredients. Secondly, the kabocha squash adds a hearty stew-like quality. The result is a teriyaki chicken dinner very unique from the classic preparation. Thirdly make-ahead dinners like this are perfect to utilize on a busy day.

In conclusion, Slow Cooker Teriyaki Chicken is a subtly sweet keto friendly dinner that is sure to satisfy. With the added bonus of preparation/cleanup being a breeze.

A Low Carb/ Keto Dinner

For this keto-friendly teriyaki chicken, you only need three main ingredients. The only additional ingredients are lemon and parsley for serving and garnish.

However, this recipe is not only for the keto dieter. You will discover that this meal is also paleo and gluten-free.

If you are not familiar with Kabocha Squash — it is a delicious vegetable to add to your diet. Most commonly people associate the squash with Japanese vegetable tempura. For comparison’s sake, Kabocha squash is most similar to texture to butternut. However, it is less sweet and holds up to cooking better. Thus making this squash the perfect vegetable to pair with a delicately sweet teriyaki sauce.

Kevin’s Teriyaki Sauce

When I was offered the opportunity to join Kevin’s recipe contest, it was the Teriyaki Sauce that made me want to participate. Therefore, this was the first recipe that I created.

To sum up how I feel about Kevin’s keto friendly Teriyaki sauce. You must keep this in your pantry at all times. After that, I want you to know just how perfectly balanced this sauce is. I have never personally tasted a Teriyaki sauce that perfectly balanced the sweet and tangy flavor profile.

You will notice that I brown the cubed chicken before cooking. However, I want to make it clear that this step is entirely optional. Before cooking this recipe myself I did some research. On the other hand, I do find that our family prefers the texture of the meat once it is cooked.

Kevin's Natural Foods makes a delicious keto friendly Teriyaki Sauce. It was the perfect addition to this simple keto chicken teriyaki slow cooker recipe.

Cook Time 4 hours
Total Time 4 hours 10 minutes

Ingredients

  • 2 lbs of boneless skinless chicken breast or thighs 
  • Kevin's Natural Foods 
  • 1/2 of a Kabocha Squash seeded and chopped. (Approximately 4 cups)
  • Lemon and Parsley for Garnish

Instructions

  1. Cut the chicken breast or thighs into cubes teriyaki sauce keto friendly
  2. If you have time to brown the chicken in a nonstick pan, this is not necessary -- However, I do feel that it really improves the final texture of slow-cooked chicken. browning chicken breast
  3. Add the browned chicken to your slow cooker. browning chicken breast.
  4. Use one packet of Kevin's Natural Foods Teriyaki Sauce and evenly coat the chicken. teriyaki chicken
  5. Set the slow cooker on high for a 3-4 hour cook time or low for a 5-6 hour cook time.
  6. While the chicken cooks prep the kabocha squash but cutting it into cubes. Leaving the skin on is my preference, but you can always remove the skin as well. kabocha squash


Do not add the Kabocha Squash until halfway thru cooking. Add the squash with 1 hour remaining if you would like to squash to stay firm. Or, for a creamier texture to the dish add the squash for the remaining 2-3 hours. I cooked my kabocha for 3 hours on low. teriyaki chicken and kabocha squash in the slow cooker

Notes

To serve squeeze fresh lemon over the plated dish, and add parsley for garnish. The lemon brightens the simple but delicious flavors in this dish.
