If you like a nice thick soup, trust me when I say that this was comparable to the thickness that you would normally get from potatoes. Another amazing bonus of this soup is that you can load it up with all your favorite toppings. I always love to add bacon, green onions, and cheese to mine.

My hubby is a pretty tough critic when it comes to soup, and he genuinely liked it more than any tater soup he has tried before. I share this because I know my hubby isn’t the only man that doesn’t find soup to be a filling enough meal. Since starting keto I have noticed my husband’s hunger to continue to increase as he looses more and more weight. No side dishes were necessary when I made this, but he was able to load up his soup with all the fixings.

I personally think the results are better when using frozen cauliflower florets. The added bonus of this is keeping frozen cauliflower on hand makes this dinner even easier to make in a pinch. I plan to attempt this recipe in my instant pot and will share the instructions once I do.

All my favorite recipes are comforting and super simple to prepare and this soup is no exception. The texture and taste are reminiscent of the spud filled original. Ingredients

  • 3 lbs of frozen cauliflower florets
  • 8 cups of chicken stock
  • 1 tbsp butter
  • 1 medium onion
  • 3 roasted garlic cloves
  • 1/2 cup bacon bits
  • 4 oz of softened cream cheese
  • 1-2 tbsp Onion Powder
  • 1 tbsp Paprika
  • 1/2 tbsp Dried Garlic
  • 1-2 tbsp Dried Chives
  • 1 tbsp Dried Parsley
  • 1-2 tbsp Celery Salt
  • Salt and Pepper to taste
  • 1/2 tbsp Mustard powder
  • 1/2 tbsp Poultry Seasoning
  • Dash of Worcestershire Sauce
  • Spicy brown mustard

Instructions

    1. Saute onion in butter until translucent. Add bacon and saute for a minute or until it becomes fragrant.cauliflower soup starts with bacon and onions
    2. Add in frozen cauliflower and chicken stock.
    3. Add in all the seasonings, and Worcestershire sauce and mustard. seasonings for loaded cauliflower soup
