Keto Overnight French Toast Casserole is a Christmas eve tradition for our family. However, we love this recipe so much that we have started making it year-round. Nothing beats throwing this casserole in the oven in the morning and having fresh baked french toast in under 40 minutes. Another benefit of this recipe is far less mess than standard french toast.

The most important part of french toast is bread. I strongly suggest using the recipe below to make cloud bread loaves. However, you can always make this recipe using your favorite low carb/ keto-friendly bread. I have not tried any other bread to make this recipe, but I would love to know how it turns out if you do.

See the instructions below for the sweet variations that I made to the recipe. I have not included the nutrition info for cloud bread, sugar-free mom shares great nutrition info for her recipe. The Nutrition info below is for my casserole portion.

Cloud bread creates a wonderful texture for this overnight french toast casserole, and it is lower in carbohydrates than most low carb breads. Each loaf contains approximately half the amount of almond flour of a standard keto bread. I also love how the cloud bread held up when soaked overnight in the egg wash, which is the most important part of this recipe.

Make sure you evenly coat all the bread with your egg wash. Don’t be alarmed if it seems like you have too much egg wash, the bread will absorb it as it sits in the fridge overnight. I have also found that the bread absorbs more liquid as it bakes, and having everything evenly saturated prevents the slices from getting too dry.

The pecan topping is optional, but I do recommend topping with your favorite keto syrup and butter. No syrup necessary when you make the praline topping, but of course it is always optional.

French toast casserole is the easiest brunch to enjoy for any occasion. This is our family's favorite breakfast treat.

Ingredients

  • Two cloud bread loaves from Sugar-Free Mom. I have provided the link in the instructions.
  • To make the egg wash you will need:
  • 6 eggs
  • 1/4 cup half and half
  • 1/4 cup heavy cream
  • 1/2 cup powdered monk fruit sweetener
  • Dash of cinnamon.
  • To make the Candied Pecan Glaze you will need:
  • 6 tbsp melted butter
  • 2 tbsp swerve brown sweetener
  • 1 cup diced pecans

Instructions

    1. For this bread, for this casserole, I followed Sugar-Free Mom's recipe for cloud bread. I made two loaves so that I would have enough french toast for leftovers. Swap cinnamon for onion and garlic powder.freshly baked keto friendly cloud bread for overnight french toast casserole
    2. Once the bread has a chance to cool. Slice the loaves into approximately 3/4 inch thick slices. If you prefer you can also cube up the bread. Now prepare your egg wash.
    3. Mix together all the ingredients for the egg wash and whisk.
    4. Place sliced or cubed bread in a greased baking dish. Evenly pour your egg wash over the cloud bread so that all the bread is saturated. Cover, and refrigerate overnight. The bread will absorb the liquid, so don't worry if it seems soupy.
    5. The next morning before baking mix 6 tbsp melted butter, 2 tbsp swerve brown, and diced pecans. Pour over the casserole. Preheat oven to 350.
    6. Bake at 350 for 30-35 minutes.

Notes

Although, I have not tried to make this recipe with a low carb bread alternative, that would be a great option to make this recipe even easier to prepare. There are some new great loaves on the market that are so similar to full carb bread. I personally would love to try this recipe with Chompies Cinnamon Raisin Bread.
