This keto bagel dough is your typical fathead dough. In this recipe, we are using extra baking powder. The extra baking powder used in this recipe creates the perfect light and fluffy baked bagel. I prefer this result over a much more dense keto bagel, or a bagel that does not rise at all.

The doughnut pan does not allow the bagel to spread and even helps the bagel keep the perfect bagel shape.
If you want to make keto bagel buns a baking sheet will work just fine. If you do not have a doughnut pan on hand I love this one, it is what I use in my kitchen. Don’t let a doughnut pan stop you from enjoying a keto bagel. I just want you to know why I prefer to use a doughnut pan.

I have a secret for you, and I think you are going to love it. The secret to a quick keto-friendly bagel is having bagels in the freezer ready to bake. Follow all the instructions below to prepare your keto bagel dough, and form the dough into the bagel round shape. This is where my handy secret comes in. The raw keto bagel dough can be frozen, and then baked fresh when you want a keto bagel in a pinch.
I like to make a dozen bagels at a time, so I double this recipe. I form the bagels and freeze them all on a baking sheet. Once the bagels have frozen completely I place them into a freezer-safe Ziploc. When you are ready to bake the keto bagels: pop the frozen bagel straight into the doughnut pan. You can also bake the bagels on a baking sheet, the result will be a much flatter bagel. I like to bake the bagels on a baking sheet when I want to top them, instead of cutting them in half. When baking the keto bagels from the freezer the bake time is slightly longer. It is best to reduce the oven temp to 375 degrees and bake for a little longer 20-24 minutes.

Keto Bagels

These are the best keto bagels because of one simple change in the ingredients.
Ingredients
- 2.5 cups freshly grated mozzarella
- 2 oz. Cream Cheese
- 1.5 cups blanched almond flour
- 1.5 tbsp baking powder
- 2 room temperature eggs
Instructions
- Preheat oven to 400
- Sift almond flour and baking powder into a Mixing bowl. Sifting almond flour makes it very easy to mix without getting any clumps.
- Place Mozzarella and Cream Cheese into a microwave-safe bowl. Microwave cheese mixture for 30 seconds and then stir. Microwave for an additional 30 seconds and stir. Since microwave temperatures vary continue this step one or two more times if the cheese mixture is not hot enough. You want the cheese to be very melted but not starting to burn.
- While you melt the cheese in the microwave add your eggs to the dry ingredients and mix until well combined using a stand mixer or by hand.
- Take the melted cheese directly from the microwave and add it to your flour mixture. Knead the dough until very well incorporated. I like to use my stand mixer because I get a nice fluffy dough for the bagels.
- Chill the dough. This step is crucial and makes the dough much easier to work with. Fathead dough, in general, is very sticky and hard to handle unless it has the proper time to chill. If you’re on a time crunch place the dough in the freezer for 10 or 15 minutes.
- Roll the dough into cylinders and form your bagels. Top with your favorite seasonings: everything but the bagel, pizza, jalapeno cheddar, and sesame seeds to name a few. For best results bake the bagels in a doughnut pan. This helps the bagels keep their shape.
- Bake for 18-20 minutes until golden brown.

I used carb manager to calculate the macros. It is 5 net carbs, or 7 grams total carbs.
I added an extra 1/2 tablespoon of baking powder. Baked them in a 4 1/2″ round by 3″ deep pan and made hamburger buns. Turned out SO good! Also used the recipe and made the bagels and we loved them. Spread some butter and sugar free jam on them!
