My name is Karen and all the brilliantly keto recipes are my creations. I am a mom to a toddler. My husband and I just celebrated 7 amazing years married. I am a self-taught chef and a keto weight loss success story. In the summer our family packed up and moved from California to a slice of heaven near Charlotte, North Carolina. I am now navigating life as a stay at home mom, and focusing more on this safe space for you.
I am grateful that you have found me, and hope you enjoy this safe place:
A little back story:
Every single aspect of my life has always had an emphasis on creativity. As a toddler, my medium was water-based paint and a canvas. I spent the better part of my 20’s blessed by a wonderful career as a hairstylist. Cultivating this space and creating low carb recipes has become a healthy outlet that also feeds my soul.
I spent the better part of my 32 years on earth overweight. Honestly, I truly can not remember an age that I was not aware of my size. Post-baby I hit rock bottom, and I knew something had to give. For me, keto was a desperate attempt to lose weight, that I never intended to commit to long term. Little did I know how much my life was about to change.
The recipes that I share are a direct correlation to my weight loss journey. These recipes have been the fuel that I have fed my body. My recipes are proof that you CAN transform your life (mind, body, and soul) in the kitchen. This creative outlet has turned into the most amazing gift that I have ever given to myself. Sharing my story with you has become the most rewarding endeavor of my life.
I started my weight loss journey January of 2018. Today 20 months in I have successfully shed 110 pounds of weight FOREVER!
Are you wondering what has made this weight loss journey different?
I believe that one of the biggest keys to my success has been my desire to create keto versions of the foods that I crave. Which is precisely why I started this blog.
I sincerely hope that this blog becomes a place that you come to for support and encouragement. Most importantly I hope that you find the recipes here delicious.
A huge low carb priority for me is:
Making delicious food and continuing to enjoy the finer flavors in life. There is no reason to suffer through a low carb lifestyle. Food is nourishment and meant for our enjoyment.
I love food, my husband loves food, and we are raising our daughter to love good food too! Keto has not changed our love food.
What you can expect from my recipes:
All of the keto, low carb, and Atkins friendly recipes that I post are made for my family in my home kitchen. In this phase of life in my kitchen, simplicity is key. I in turn always work to produce content for you that can easily fit into your busy schedule. My goal is to always post realistic recipes that everyone in your family will love. I sincerely hope that you find the recipes here to be easy to follow, simple to make, and most importantly delicious.
Cheers to eating well, laughing sometimes, and loving ourselves thru it all!
I am here for you, to support you, I wish to inspire you, but most importantly I believe in you.
Hugs. xoxo. with love,
Karen
